This time of year I almost always have a watermelon cut up and in the fridge. I love to take a bowl full of watermelon to work as a snack or sit on my back deck and enjoy it in the evenings. This recipe for Watermelon Salsa is one of my favorite ways to use watermelon and it only has a Weight Watchers Points Plus value of 1. This recipe is great with grilled chicken or fish.

1 cup cucumber, seedless, chopped into small pieces
1/2 cup uncooked scallions, chopped into small pieces (green and white parts)

1 1/2 Tbsp mint leaves, fresh, minced
1 tsp sugar
1 Tbsp olive oil
2 Tbsp fresh lime juice
Toss all ingredients together in a large bowl.
