This is not a Paleo-friendly dish, nor Weight Watchers, but it is a favorite of mine for a diet splurge in the summer.
It is a much requested recipe. Basically the only dish I bring to get togethers with friends! Be sure to get the measurements right- sometimes it turns out too sweet or too sour.
Watermelon and English Cucumber Salad:
1/2 cup cider vinegar
1 cup water
1/2 cup sugar
Salt and pepper to taste- they really do being out the sweet and sir flavored so don’t skip them!!!
1 bunch of green onions, or 1/2 a Visalia onion chopped.
One half a watermelon, balled or cut into bite size squares.
2 English cucumbers peeled and chopped
Mix together the wet and dry ingredients. Make sure your watermelon and cucumber are in bite sized pieces. Mix the chopped pieces in with the mixture of wet and dry ingredients. Give them a good stir so the pieces are coated evenly. Chill for a few hours (this is a recipe best after it sits overnight- AKA about 12 hours.)
