The Cake of Blood, Sweat, and Tears in My Home
Messy but shiny and so excited for my Bulgarian boyfriend to try. Simply locating the correct recipe has been an ordeal. The first version I found was made with hazelnuts, completely incorrect since this is a walnut based cake. Several recipes later I found “The One.”
The recipe I used was from My Food Table. The author of the blog, Polina, grew up in Sofia, Bulgaria. This cake is the “national cake” and can be found in any bakery in their country, but the original recipe is as elusive as the loch ness monster. Check out her blog for the tasty cake recipe.
I tweaked her recipe a little, instead of almond flour I used organic non-bleached flour with baking soda to help it rise a little. So far, I have made the cake twice. The first attempt was above, not very moist because I accidentally switched up the amount of sugar that goes into the cake and the filling. Oops. And used one cup too much of the walnuts. Double oops. The cake was a bit dry and too sweet in the wrong places. However, the second attempt the day before Thanksgiving for my parents turned out beautifully.
It pretty much sums up this week, we could have been working out like that except we ate too much Torta. I laughed when I saw this, because we certainly have eaten enough of the lovely walnut cake!
Why is it the cake of sweat, blood, and tears? During the initial making of the first cake, I was sweating! You have to be on top of your game and have timing down perfectly. Things start moving fast when making this cake. I broke a glass in my haste and a tiny sliver was missed during cleanup, it had traveled to the carpet. My poor little guy was scooting across the carpet, and if course his poor little shin found the glass sliver. He bled for a second and cried about bleeding for at least fifteen minutes. The drama.
The cake? Worth the drama, and I am learning a whole different food culture. Why do we not have cuisine like this is America? Just like Kinder Eggs and their ban in the States, there is a whole world out there we are missing!
