I hate Valentines day. There, I said it. It’s a ridiculous day that makes singles feel bad, roses are marked up hundreds of percent, and hallmark makes a gigantic profit.
However, I think my boyfriend’s feelings would be hurt if I ignored the day entirely, which is why in true to me fashion, I came up with a killer Valentine’s Day surprise idea for him.
He is just as busy as I am, with working full time, trying to maintain a home, and having his kids half the time. Does he have hours upon hours to dedicate to making dinners every night? Not at all! So here is my plan:
Make several meals for him for the freezer, so all he has to do is defrost and serve. Perfect!
What meals do I have in mind?
Crock pot chicken corn chowder
Chicken and Dumplings
Chicken Noodle Soup
Chili with beans and beef
My crock pot sweet potato breakfast casserole
Breakfast spinach and sausage frittata
Seven different meals, all ingredients go together for cost effectiveness.
Nothing fancy, just normal meals! And very easy to prep and throw together! I plan on getting to his house before he gets off work and have two crock lots going (corn chowder and sweet potato breakfast casserole,) have the chili and chicken noodle soup going on the stove, the fritatta already made, and the baked ziti going.
For dinner, I saw Giada on the Food Network making a white chocolate risotto. Yeah, that might be dinner (dessert for dinner? Why not, life is short, eat dessert first!)
How are you and your sweetie celebrating Valentine’s day?
