I love crockpot meals. I especially love crockpot meals when I forget to thaw any meat out because I can throw the meat in the crockpot (usually) and let it cook all day. This morning I was digging through the freezer trying to find some inspiration for dinner tonight. I found a package of boneless skinless chicken breasts so away I went to Pinterest to find a recipe for crockpot chicken.
The first few recipes I came across that looked appetizing required ingredients I didn’t have on hand. I then found this Taste of Home recipe for Sweet and Saucy Chicken. I had most everything it required and the picture looked good so my decision was made. (Don’t you love my decision making skills!)
Here’s the recipe with a few modifications for what I had in my pantry:
Chicken–the recipe calls for 1 chicken (4lbs) but I used 4 boneless skinless chicken breasts. Anything you have on hand will work.
3/4 cup packed brown sugar
1/4 cup all-purpose flour (I used self-rising)
2/3 cup water
1/3 cup white vinegar (I used apple-cider vinegar)
1/3 cup reduced-sodium soy sauce
2 tablespoons ketchup
1 tablespoon dried minced onion (I didn’t have dried onion so I used one packet of dried onion soup mix)
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
Place chicken in a slow cooker. In a small saucepan, combine brown sugar and flour. Stir in the water, vinegar and soy sauce. Add the ketchup, onion, mustard, garlic powder, salt and pepper. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
Pour over chicken. Cover and cook on low for 6-8 hours or until chicken juices run clear. Serve with rice or noodles if desired. Yield: 6 servings.
