For this week’s Tasteful Tuesday I wanted to give you a whole bunch of tasty chicken recipes that can be made in the crockpot. Many of these recipes are Paleo and Weight Watchers friendly, or can easily be adapted to be, if you are following those plans.
The first recipe is one that I found online last night and I actually have cooking in my slowcooker right now. It is a Lemon Rosemary Roast Chicken from The Cooking Husband.
Lemon Rosemary Chicken
1 whole roasting chicken
1 fresh lemon, cut into 4 sections
3 springs fresh rosemary
4 whole cloves garlic
1/2 bottle white wine
1 cup water
salt and pepper to taste
Place lemon into the cavity of the chicken.
Do the same for the rosemary and the garlic.
Place the chicken in the crock pot, breast side down (this allows the breast to stay more moist.)
Squeeze two lemon sections on the chicken and put in the crock pot.
Sprinkle outside of the chicken with salt and pepper.
Pour wine around the base of the chicken.
Now add water.
Set the timer for four hours on High.
Put on the lid and forget about it.
The next recipe is another favorite of mine from Semi Homemade Mom. This recipe for Slow Cooker Salsa Chicken is so easy and tastes great.
Slow Cooker Salsa Chicken
4 boneless, skinless chicken breasts (frozen is fine)
1 cup salsa
1 can condensed cream of chicken soup
1 packet taco seasoning
1/2 cup sour cream
Place chicken in the bottom of your slow cooker. Sprinkle taco seasoning on chicken. In a bowl, combine soup and salsa. Pour over chicken. Cook on high 4 hours. Shred chicken with two forks and stir in sour cream. Serve on tortillas or as desired.
If you have ever thought about preparing a bunch of crockpot meals that you can freeze and then just toss in your slowcooker, you really should check out Loving My Nest’s blog. She has a ton of recipes that you prepare, freeze, and then throw in your crockpot when you are ready to cook them. This recipe for Chicken Tortilla Soup came from her website.
CHICKEN TORTILLA SOUP
1 pound chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
Combine all ingredients into a Ziploc bag. Freeze. Thaw and put into a slow cooker add 2 cups water and one 14 oz can of chicken broth. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours. Shred chicken in crock pot after cooking is done.
Preheat oven to 400 degrees F (200 degrees C).
Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup. Serves approx. 5-6 people.
The next recipe also came from Loving my Nest. I included this one because I know my blogging partner Miss Adventures loves Sweet Potatoes. With a few minor changes I think she could make this recipe for Chicken and Sweet Potato Stew Paleo friendly.
CHICKEN AND SWEET POTATO STEW
4 boneless, skinless chicken breasts, cut into bite-size pieces
2 medium sweet potatoes, peeled and cubed
2 medium Yukon Gold potatoes, peeled and cubed
2 medium carrots, peeled and cut into 1⁄2-inch slices
1 can (28 ounces) whole stewed tomatoes
1 teaspoon salt
1 teaspoon paprika
1 teaspoon celery seeds
1⁄2 teaspoon freshly ground black pepper
1⁄8 teaspoon ground cinnamon
1⁄8 teaspoon ground nutmeg
1 cup nonfat, low-sodium chicken broth
1⁄4 cup fresh basil, chopped
Combine ingredients minus broth and add to gallon Ziploc bag. Freeze. Thaw add broth and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. Serve over hot rice. Serves 6-8 people.
This recipe for Lemon Garlic Crockpot Chicken came from Civilized Caveman and is great for those following a Paleo lifestyle.
1 Whole Chicken, 3-5 Lbs
30-40 Cloves of garlic, peeled (I used TJ’s already pre-peeled)
1 Whole Lemon
1 White Onion, sliced
Salt and Pepper
Homemade Italian Seasoning Blend – Equal Parts of:
Line the bottom of your crock pot with your sliced onions and all of your peeled garlic
Wash your chicken under cold water and then pat dry
Place your chicken on top of your onions and garlic
Cut your lemon in half and squeeze the juice all over the chicken
Season the inside and outside of your bird generously with salt, pepper, and italian blend
Place the lemon halves inside the cavity of your chicken
Put the lid on your crock pot and cook on low for 6 hours
Once your chicken is cooked, remove the chicken and place on a plate, shred all chicken away from the bone and place back in the broth with the onions and garlic
Throw away the carcass and enjoy the garlicy, oniony, and lemony chicken 🙂
