Back in the summer we had an abundance of zucchini from our garden. Truth be told, I was a little overwhelmed with so much zucchini, even after giving some away, so I had to get creative. I made zucchini bread, chocolate zucchini muffins, lasagna with zucchini added in, and many other dishes with zucchini. One day I was in the mood to bake so I made 3 different kinds of zucchini bread, for a new twist on zucchini bread. The first was quite a bit different than your normal zucchini bread. This was a savory zucchini bread with onions, cheese, and tomatoes! It was delicious and went great with the lasagna that I made that night, and of course the lasagna had zucchini added in it as well.
A New Twist on Zucchini Bread
Summer Harvest Zucchini Bread
3 Cups Flour (I use self rising flour)
1 teaspoon salt
1 Cup Grated Zucchini
1/2 Cup Tomato, Diced
1/2 Cup Green Onion, Thinly Sliced
1 Teaspoon Oregano
1 Cup Sharp Cheddar Cheese, Grated
1 Cup Buttermilk
3 Tablespoons Oil
Preheat oven to 325 degrees.
Combine the flour, salt, zucchini, tomato, onion, oregano and cheese in a large bowl and stir to combine. In a small bowl, whisk the milk, eggs, and oil. Add this wet mixture to the dry and stir. (It will be thick)
Pour the batter into a prepared loaf pan. Bake for 60 minutes or until a skewer inserted into the middle of the loaf comes out clean. Cool the bread in the pan for about 5 minutes then remove it from the pan and cool completely on a wire rack.
I also made a Pumpkin Zucchini Bread too. This recipe is enough to make 2 loafs but I did one large loaf pan and 6 individual pans.
Pumpkin Zucchini Bread
3 eggs, slightly beaten
1 1/2 cups sugar
1 cup apple butter
2 Tablespoons oil
1 (15oz) can pumpkin
2 Tablespoons vanilla
3 cups flour
1 teaspoon ginger
1 teaspoon pumpkin pie spice or cinnamon
2 1/2 cups zucchini, shredded
Mix eggs, apple butter, oil, sugar, and vanilla. Stir in pumpkin. Add the rest of the ingredients, except the zucchini. Stir till combined. Add zucchini. Bake at 350 degrees until done.
