The photo is not very pretty, but this dish is oh so cheesy and creamy, your family will ask for it again and again!
6 ounces cream cheese
2 packs frozen spinach
1 bag frozen broccoli
4 ounces parmesan cheese
8 ounces cheddar cheese
4 ounces heavy whipping cream
This recipe is something I just threw together. I’m doing the low carb diet and have lost ten pounds since beginning! Today I cheated a bit. Chocolate from Valentine’s Day, cheesecake, and some other little treats. This evening I tried to somewhat get back on track. This low carb “diet” is going really well. I feel a lot better and in conjunction with using Thrive there has been quite a bit of weight lost. That was the ultimate goal, weight loss. I was tired of feeling sluggish and not liking what I saw in the mirror. My face felt too wide and I didnt like the fat that was beginning to accumulate around my middle, especially the back view.
Ok, back to the recipe!
I started by warming and draining the spinach and broccoli. That took some time because I am trying to stop using the microwave so much in the house. Once the veggies were drained I dumped them in the stoneware Baker, chopped up the cream cheese, poured the cheeses in, and put the heavy whipping cream in all the empty space. I warmed the oven to 400 degrees and threw the thawed sausage on top. The concoction was baked for about 45 minutes.
The result? My daughter, the food critic of the house, loved the dinner! In fact, she has asked me to make it multiple times, always referring to “that sausage and cream cheese thing you made.” Maybe that spinach bake will be for dinner tonight!
Update! Since writing this post originally two months ago, we have made this recipe at least three times using a variety of ingredients. Our favorite was raco meat and spinach, with avocaodo chopped for the top. Very very tasty! With a base of cream cheese and a medly of veggies and meat, this can be a great low carb dish, full of fat for your low carb or keto diet!
