Tonight is one of those leftover nights. I had some steaks that needed to be used, as well as a bunch of scallions, chicken stock, portobello mushrooms, and garlic. What perfect ingredients for a steak tip salad.
I simply chopped up all the ingredients, threw them in a skillet on low, and allowed them to simmer. Suddenly my house smelled of cooking meat garlic onion wonderfulness. My mouth watered!
This was perfect atop a salad with my favorite ginger dressing. Nope, I did not make the dressing. Bought it off the shelf in the refrigerator section at the grocery store. How very Paleo of me, right?
Leftover night in my house isn’t always this fantastic. We just happened to have these ingredients left in the fridge just begging for a fabulous meal to be thrown into.
Lots of variations can be made from the leftovers from this leftover meal. The gravy was fantastic, so some homemade smashed potatoes could be smothered by the yummy gravy. . More stock can be added, a little coconut flour, some green beans and kale, and a beef stew can be born.
When you have a little imagination, so much can be made from things you have in your kitchen! The next time the kids whine “we don’t have anything to eat!” Charge them with the task o looking at what is in your cabinets and fridge, and come up with a quick easy recipe! This can be done for any meal, and can help stretch your food budget and eliminate food waste.
