A frittata, such an easy, beautiful, and impressive food to throw together quickly for a Sunday brunch. Easy and quick you say? Indeed.
What did I use?
8 slices of bacon
8 cloves of garlic, minced
1 package frozen spinach, thawed and drained
1/2 tablespoon black pepper
1/4 sweet onion
1/4 teaspoon salt
1. Mix all ingredients in a big bowl. The mixture will be very dense.
2. Bake in a pre-heated oven at 350 for about 25 minutes or until browning slightly on the top. Depending on altitude, longer baking times may be required.
I threw some cilantro in the top for some pop of bright green. This was very tasty!
