If you look online there are hundreds of Taco Soup recipes out there. They all claim to be the easiest, the fastest, the skinniest, etc. But I’m going to share with you a taco soup that is not only a “skinny” version but is my favorite.
This soup can be made on the stove or in the crockpot. If using the crockpot just brown your meat ahead of time, add the rest of the ingredients and set it to cook all day.
You can also change this soup up to fit your tastes. You could use ground turkey or ground chicken instead of ground beef. You could even use shredded chicken! Each serving of this Skinny Taco Soup is only 167 calories!
This soup is delicious as is but I like to top it with some sour cream, a little shredded cheese, cilantro and tortilla chips.
Skinny Taco Soup
1 lb ground beef
1 15 oz can corn, drained
1 15 oz can black beans, drained and rinsed
1 15 oz can pinto beans
1 can diced tomatoes
1 can Rotel
1 medium onion, diced
3 cups water
1 package taco seasoning (I prefer the low sodium version.)
1 package Ranch mix
1. Brown ground beef. Drain.
2. Add all of the other ingredients. Stir well.
3. Bring to a boil. Allow to boil for about 5 minutes.
4. Turn down to low and allow to simmer for about 30 minutes.
5. Serve and enjoy!
