I’ve done something shameful in the kitchen. Something dirty, disgusting, and downright wrong. Wrong for my waistline and yours.
You’ll never forgive me. Or ever stop thanking me.
Because in the name of saving food waste, I have done something no other paleo cook has done before. Cheated in the worst, unclean recipe possible.
It was a moment if weakness. And it was worth it.

The ingredients I put together made the tastiest/worst treat ever, and it is a memory I will cherish weeks to come when I am sweating to p90x, dreaming about the next encounter. Rice goo dessert.
2 1/2 cups of rice. White rice.
2 1/2 cups of water (not so bad, right?)
1/2 stick of butter (I didn’t want to waste it! Stop judging me!)
Two bananas (they have potassium.)
Two tablespoons of corn starch
And… This is the really disgusting/amazing part:
Most of a can of sweetened condensed milk. The part I didn’t spoon out into my mouth.
It was a little soupy so I added more corn starch, this has no name except yummy gooey needed something sweet so I went a little crazy and hid it in my fridge so my kids didn’t get ahold of this terrible concoction. I’m ashamed.
Part of the blame must be given to my childhood friend Brittany. When we were growing up her mom used to it sugar and butter in rice and it was an amazing sweet treat. Why not amp up the unhealthy with sweetened condensed milk? Is a far cry from my usual paleo cooking coconut sugar. Sigh.
To lighten my guilt I chopped up (using my pampered chef food chopper) a pint of strawberries and threw them in. This huge amount of sweet treat will force me to exercise more this week (as opposed to staring at my exercise equipment that never gets used.) I plan on freezing most of it, and eating occasionally. How will I freeze? When I was making baby food, I would freeze things like this in muffin tins. It is a great way to get a small portion ready for serving at a later time.
If you want to make it even more sinful:
Homemade Whipped Cream
2 cups heavy whipping cream
1 cup sugar
Whip the heavy whipping cream with your hand mixer or kitchen aid until it starts to get thick. That will not take long. Begin to incorporate the sugar into the heavy cream when it starts to thicken. Watch the consistency. It will get too thick if you let it.
