Here in Kentucky we’re famous for a lot of things like bourbon, horses, and Corvettes. But Kentucky is also known for a popular pie known as a “Sawdust Pie“, which originated at a restaurant known as Patti’s 1880’s Settlement in Grand Rivers, Kentucky. Recently I was looking for a dessert recipe for a family dinner and came across this Sawdust Pie recipe I had saved awhile back. The problem with the Sawdust Pie recipe is that is has pecans and in my family there are so many nut allergies we try to avoid recipes which include nuts such as pecans, walnuts, cashews, and peanuts.
So, I was wracking my brain for a way to adapt this recipe when I came across a recipe which included chocolate chips. Well that got me thinking…hmmm…what if I added the chocolate chips and then substituted the pecans with caramel chips. I would essentially have the makings of a Girl Scout Caramel Delight Cookie, which by the way are my absolute favorite!
In some parts of the country these cookies are known as Samoas but around here in Kentucky they are usually sold as Caramel Delights and in my opinion they are delightful!
