Meat!!! I’m about as opposite of a vegetarian as one can get! I waslooking in the abyss and thinking about how we could easily have bacon with a side of chicken most nights this week! (We did yesterday! Just an FYI- chicken breast is 6 weight watchers points and bacon slices are two points per slice, just in case one of The Mrs weight watchers crowd are reading!) A lot of folks do “meatless meals,” and Paleo allows for that, but you have to be mindful of the premise behind Paleo- eating what our hunter-gatherer ancestors did prior to the agricultural revolution.
Ok now…I’m not eating a TON of meat every week. I am fully aware of the dangers of that and the potential of all of the cancers that may or not be attributed to eating a lot of meats. However, the amount I am eating, and losing weight, amazes me to no end.
So what do I have in my refrigerator?
Meals I’ve made this week and last
Almond based creamer for coffee (happiness in my home depends on a perky caffeinated mommy.)
Pre-cooked bacon (in addition to the other bacon.)
Cheese for my non Paleo daughter
Various condiments and salad dressings for my non Paleo daughter.
Wine I used to break down chicken to make it more tender.
Various herbs and garnishes (dill, cilantro, ginger root, garlic.)
So that’s it folks! If you’re doing Paleo, what’s in your ice box? Do share! I am in need of some recipe ideas that are simple and won’t bore me!
My newest idea for a quick Paleo lunch from all this is:
Frozen chicken (pre-cooked)
A little olive oil
Garlic salt or various other dried spices
Toss it all together and Microwave in a microwave safe dish and eat for lunch at work! Easy peasy!
