The fact I love to cook and be creative in the kitchen is no secret. Making new Paleo dishes for my family is something a way I love to spend my time, especially on the weekends when I have time to burn. This morning was no exception when I decided to concoct a Paleo banana pudding.
This morning I wanted to make a sweet treat for this evening after a day of Paleo and working out. I had some bananas getting a bit too ripe, and a can of coconut cream… Paleo banana pudding was born.
This is a pretty simple recipe for paleo banana pudding. I started with two bananas, opening the peels and cutting them with a knife into quarter inch slices. Feel free to get crazy and chop them smaller especially if you have small children who will be eating it. Make it your own!
Melt some coconut oil in a pot and throw the bananas in. Now for the Trader Joe’s coconut cream. Where I live coconut cream isn’t an easy find. Until Trader Joe’s came to the area. Now I can easily get cans of it whenever I need! *If you have a wheat sensitivity be careful using this cream!
When the mixture of coconut cream and bananas is just about to a boil, add 1/4 cup of honey and three tablespoons of tapioca powder. (To make this non paleo, you can sub corn starch for the tapioca powder.) Whisk mixture together, stir constantly, turn down the heat, and let cool.
Pour into ramekins and enjoy your paleo banana pudding after a few hours in the refrigerator.
*Update: Since writing this post, I have learned more and more about paleo. The first comment below was a person letting me know “cornstarch isn’t paleo.” Thank you for publicly letting me know I was wrong. The original recipe I posted, I used corn starch instead of tapioca powder. I was a paleo newbie! I had no idea! Rookie mistake.
