I have finished my second week of being faithful to the Weight Watchers program and journaling my daily food choices. Sunday is my official weigh in day and I was excited to see another 4 pound loss for this past week so that puts me at 11 pounds that I have lost in the past two weeks since being back on the program. My mom and I were talking recently about how Weight Watchers is the only “diet” program we have ever done that we have consistently seen a weight loss each week. When I was following the program last year I saw a loss each week, until I slacked off and fell off the wagon so to speak. It is much more encouraging and easier to stick with a program where you are actually seeing results.
Here are some of the things that I have been eating each day:
For breakfast I usually have an egg on an English Muffin. That is 4 points. To make the eggs, I spray cooking spray in my muffin pan. I then break an egg and put one egg in each muffin cup. Using a fork I stir it up to break the yolk and mix it all together. Then I usually drop in chopped onions and peppers and a little salt and pepper. I usually make at least 6 each time I do this so I have them ready for each day. Put the muffin pan in the oven at about 350 degrees for at least 15 minutes. You will want to use a fork and check to be sure the eggs are done. Depending on your oven the cook time may be longer. After the eggs have cooled I place them in a ziploc bag. Then each morning I just take one out, zap it in the microwave for a few seconds and place it on my English Muffin. I like to use a little spicy brown mustard (0 P+) on it as well.
For lunch I will often each leftovers from dinner the night before. Sometimes I will eat a Lean Pocket or make a sandwich with one of the thin buns or the Hungry Girl wraps.
For dinner I try to prepare some type of lean meat. We eat a lot of chicken and fish and I love to grill both of them. Even in the winter time. I will often grill Tilapia by placing it in a foil packet with some slices of lemon, a few chopped leaves of cilantro and salt and pepper. Place the foil packets on the grill for about 10 minutes or so until the fish is flaky when you check it. I also grill a lot of vegetables. Asparagus is one of my favorite grilled veggies. I lay the asparagus on a cookie sheet and lightly spray it with some cooking spray. I then spring sea salt and Parmesan cheese on it and then grill it. Yum!
To stay within my points limit I try to eat fruits or veggies when I need a snack. I keep cucumbers, peppers, and carrots, sliced up in the refrigerator that I can grab for a quick snack. Or some fruit like apples, bananas, or grapes.
I am also drinking a lot more water than I was before. When I was working full time I drank a lot of water but now that I’m at home I have a harder time remembering to drink enough water each day. I think that is the key to any weight loss program is to increase your water intake.
