My Paleo lifestyle: The Beginnings
This weekend was prep weekend for the Paleo lifestyle. My goal: 100% Paleo 75% of the time. I need that 25% margin of error so I can’t be disappointed in myself when someone waves a cheesecake in my face. This “Once A ______ Cooking” is complicated! More planning will be required next weekend.
What have I made this weekend?
Mustard cilantro chicken breasts- I marinated chicken breasts in a little fruity pinot, mustard, cilantro, EVOO, let it sit so the wine could break down the chicken a bit and make it moist, then bake with the marinade. Smelled great!
Sausage for breakfast (Not home made. I’m not that put together!)
Sweet potato bacon mash with parsnip- photo in one of my half way seasoned Pampered Chef baking stones located at the end of the article. The recipe was derived from Urban Paleo Chef. Great blog.
Ground beef with garlic (and patties) Just basic ground beef. Nothing fancy. I like to put a little Tony C’s in mine to kick it up a notch.
Crock pot top loin with parsnips and potatoes. It turned out really well.
Shredded carrot salad with fresh ginger and golden raisins- not sure how this will work out.
Diced banana really small for making “ice cream.” BEST way to curve a sweet tooth! Just chop bananas, freeze, then after frozen purée with some cocoa powder. It makes chocolate ice cream! Must have a treat!
I also have a couple pounds of blueberries…not sure what to do with those just yet. Maybe blended with spinach, ice, honey, and sugar free apple juice for a breakfast smoothie.
For snacks I have dried fruit and nuts. I know that Paleo doesn’t really recommend dried fruit due tithe added sugar. However, the sweet tooth must be trained. There is also almond butter in the cabinet.
If need be in a pinch I will go out and buy salad, but there’s probably enough spinach in my fridge to take care of those needs. Oil, vinegar, salt and pepper will serve as a dressing.
I cannot tell you all how excited I am to be getting back on board with my Paleo lifestyle. My skin was clear, energy level was at an all time high, and I just felt healthier when I was eating clean.
This weekend I also attempted Once a Week cooking for baby food. Apples with blueberry and spinach (basically like an Odealla green monster smoothie,) butternut squash, plain carrots, carrots and parsnips, sweet potato, and apples. It’s safe to say my Brezza got a workout but Boo Boo Bear is still not used to the sound of the purée portion of the process. In addition to the prepared baby food we have bananas to find on for breakfast. I’m set for probably two weeks now with baby food. Thank goodness!
Paleo can get expensive. So how did I stay within budget? Trader Joes. Wow. I LOVE having one nearby. Produce there is much cheaper than at a Kroger or Wal-Mart in my area! Butternut squash and blueberry prices blew me away. Lowest I’ve seen anywhere. For the meat…I did a secret shop over the weekend that offset the price of the meat and will be sending in a rebate. Got to stay ahead of the game and within the grocery budget!
