Paleo creative cuisine is still a work in progress for me. I’m trying to think outside the “chicken breast and veggie” box.
Yesterday evening I made some muffins. Since I’m a huge fan of pumpkin pie spice, they are sort of like comfort food. I didn’t have any pumpkin or else I would have added some to the recipe.
Here is what I used: (and remember my lack of usage of actual measurements. These are all ball park.)
3 large eggs
1 cup coconut flour
2 cups almond flour
1/2 cup coconut oil, softened
1 1/2 cup almond milk
1 teaspoon baking powder
2 tablespoons pumpkin pie spice
1 cup honey (I like muffins sweet!)
I baked all of this together at 350 degrees for about an hour.
They turned out surprisingly good!
The recipe yielded nine muffins…unsure of the odd number, but they were moist and dense. Inspired by the success I’ll probably make some big chocolate muffins later this week with some dark soy free chocolate. Yum! Excited for breakfast tomorrow- a muffin to go with my sweet potato/egg/onion/garlic crockpot concoction!
