I have realized that I buy more fruit in the winter time than I do in the summer time, for some reason. Recently I found a really good deal on apples so I used them to bake this Fresh Apple Cake.
Here’s what you need:
3 Cup diced Granny Smith Apples
1 Cup chopped walnuts
2 tsp vanilla extract
1 tsp ground cinnamon
3 Cups Self Rising Flour
2 Cups Sugar
1 1/4 Cup Vegetable Oil
*If using All Purpose Flour, add 1 tsp baking soda and 1 tsp salt.
Preheat oven to 325 degrees.
Lightly grease a Bundt pan or tube pan.
In a bowl, mix together apples, walnuts, vanilla and cinnamon.
In a separate bowl, mix together the flour, sugar, oil and eggs.
Fold in the apple mixture.
Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes.
Allow cake to fully cool in pan, about 1 hour.
Turn cake out onto a plate.
This cake is delicious just like it is but you can also add an icing drizzled over it. Simply mix together milk and confectioners sugar until you have a pourable icing. Drizzle over cake and enjoy!
