Eggs in a muffin tin. Perfect! Pinterest can be credited for this grand idea that is in my oven as I type.
Coconut oil to grease tin
Spinach (stick it to the bottoms of the tin with the coconut oil so it will be under the egg so it will cook IN it.)
Salt and pepper to taste
Any other additive such as garlic, thin tomato slices, basil, bacon pieces…the possibilities are endless!)
Bake at 350 until eggs are no longer runny.
These can be prepared and stored in your refrigerator or frozen and stored in a freezer bag. Just be sure if you freeze all the air is out of the bag. Nothing is nastier than mushy wet eggs that have been defrosted!
