This recipe is one of my family’s favorites and it’s so easy. This is a great way to use leftover chicken or the crushed up potato chips in the bottoms of the bags that we always seem to have. (No one at my house seems to know how to throw the bag away!) There are several variations of this recipes. You can change up the flavor just by adding a different flavor of chips on the top. I’ve made it before with BBQ chips, Sour Cream & Onion, as well as just regular plain potato chips.
Potato Chip Chicken Casserole
Chicken–cooked & shredded or diced, about 2 cups
1 Bag of Egg Noodles or other noodles of your choice
1 Can of Cream of Something Soup (I say “something” because you can use cream of chicken, mushrooms, celery, whatever flavor you happen to have on hand. Or if you want you can make your own using these recipes.)
Shredded Cheddar Cheese–1 to 2 cups, depending on how cheesy you like it
Crushed up Potato Chips of any flavor–enough to sprinkle over the top
Other Seasonings as Needed
I usually make this casserole when I have leftover chicken but it could also be made using canned chicken. I have a thing against canned chicken these days. I don’t like the flavor or texture. Whatever type of chicken you are using you want it to be shredded or diced into bite size pieces. Boil and drain the egg noodles.
In a large mixing bowl or directly in your casserole dish if you’d like to skip all the dirty dishes, mix together the chicken, noodles, and cream soup. You can salt and pepper to taste or add other seasonings of your choice. I like to used Paprika or Old Bay Seasoning. Be care though not to use to much salt because the cheese and the potato chips that you use on the top will be salty too.
Place the chicken, noodle, & soup mixture into a large casserole dish, usually a 9×13 is what I use.
Sprinkle shredded cheddar cheese over the top. My family likes it very cheesy so I usually use about 2 cups of cheese.
Now take those leftover potato chip crumbs and sprinkle them over top of the cheese. You can use any flavor of potato chips that you happen to have on hand.
Place in a preheated 350 degree oven for approximately 30 minutes or until the cheese is melted and the chips have started to turn brown. You have to be careful or you can easily burn the chips!
