Summertime means grilling time for my family. Seriously, if I could use my grill everyday I would. We grill rain or shine and we love grilled vegetables. One of our favorites is asparagus.
Growing up the only way my mom ever cooked asparagus was to batter and fry it. Not exactly the healthiest option. I rarely fry anything, really maybe two to three times a year.
This is my absolute favorite way to prepare asparagus.
You will need:
1 bunch of asparagus
1 Tablespoon olive oil
1 Tablespoon Balsamic Vinegar
You will want to wash the asparagus spears and snap off the bottom portion, usually about the first inch. The reason is, this part of the spear is very tough and you won’t want to eat it.
Place your asparagus in a gallon ziploc bag and toss with olive oil and balsamic vinegar.
Then lay the asparagus onto a cookie sheet. Sprinkle with sea salt, garlic and parmesan cheese. The amount you use is really up to you. If you like lots of salt and garlic adjust it to your tastebuds. Just remember that parmesan cheese is usually kind of salty anyways so don’t over salt it.
Fire up your grill.
Once your grill is hot lay the asparagus on the grill. You can also use a special grill basket for veggies if you want. Using tongs you will want to turn the asparagus at least once during cooking.
Its best to grill over low heat. We prefer our asparagus to still have a bit of a crunch to it and not be totally soft. This usually means grilling it for about 10 minutes.
