About 10 years ago I was fresh out of college, teaching at my first teaching job and living about 3 hours from home, all by myself. Thankfully I had a great co-worker who became a good friend. I would often go to her house to have dinner with her and her husband. We were both Family & Consumer Sciences teachers (Home Ec) so you know there was some good food being prepared! One of my favorite things that she would make was Twice Baked Potatoes.
These potatoes are so easy and delicious. If you’ve ever had Twice Baked Potatoes at a restaurant and wanted to make them at home I’m about to tell you how to do it. It’s so easy you’ll wonder why you’ve never made these before. Just a warning though, these potatoes are not diet friendly!
This recipe can easily be increased to serve more people and can be prepared in the oven or microwave.
Twice Baked Potatoes
Yield: 2 Servings
2 Tablespoons Butter or Margarine
2 Tablespoons Sour Cream
2 pieces of bacon, browned and crumbled
1 Cup of shredded cheese (you can use whatever flavor of cheese you prefer)
Salt and Pepper
Wash the potatoes and pierce them several times with a fork. You can bake the potatoes in the microwave or in the oven.
Once the potatoes are baked allow them to cool for a few minutes so that you don’t burn yourself on the next step.
While the potatoes are cooling, turn the oven on to 350 degrees.
Brown the bacon. I cooked my bacon in the microwave on a plate lined with paper towels. Once the bacon is cool, you will need to crumble it.
Once your potatoes are cooled you will need to remove a piece of the potato skin from the top.
Then, using a spoon, carefully scoop out the potato from inside the skin. Be careful not to break through the skin.
In a mixing bowl mix together the potatoes, butter, sour cream and crumbled bacon.
Add 1/2 cup of shredded cheese and mix well.
Add salt and pepper to taste.
Spoon the potato mixture back into the potato skins.
Add the remainder of the shredded cheese on top of the potato mixture. I like to press down on the cheese as I’m putting in on the potatoes, just to help it stay in place.
Top with chives if desired.
Place in the preheated oven for 10-15 minutes until cheese is melted.
Remove from oven, serve and enjoy!
