I found an amazing snack in my Twitter feed today, but lost the original author and couldn’t find it again. The original recipe was derived from the Primalist. The recipe called for a cup of unsweetened coconut chips, 1/2 teaspoon salt, 1 teaspoon cinnamon, and coconut oil. Mix it all together and toast in the oven at 350.
If course, I had to make the recipe my own. I had flaked coconut, so I used two cups, used one teaspoon of salt, and two teaspoons of pumpkin pie spice. A little coconut oil to make it all stick together, toast at 350 (watch to make sure it doesn’t burn,) and voila!
A salty sweet Paleo snack.
My next adventure with this is making it chocolate. Yum!
