Here is a Paleo crust I made the other day! This crust is incredibly moist and tasty. I have made a lot of versions of this coconut almond flour pie crust, but this one turned out the best. What filling did I use for these attempts? Paleo chocolate cream pie of course! Have fun with it and make your own great pie adventure.
Coconut Almond Flour Pie Crust
1 cup unsweetened shredded coconut
1 cup almond flour
2 Tablespoons coconut oil
1 Tablespoon maple syrup (or honey!)
1/2 tsp salt
Preheat oven to 350 degrees F. Combine all ingredients into a bowl. Mix well until all of the components stick together. Press into an 8 inch pie dish. Bake for 12-15 minutes.
My sweet tooth gets me in trouble with paleo. Making recipes like this, paleo versions of my favorite non paleo treats, keeps me on the diet. However, I am not always 100%. You have to live! Although living means sometimes eating things that are not always the best for us, doing the best we can is all we can do. The coconut in this almond flour pie crust gives this recipe just enough sweetness to feel like its an indulgence with whatever filling is used.
