This Cilantro Lime Rice is one of my favorite side dishes. If you’ve ever eaten at Chipolte then you are familiar with their popular Cilantro Lime Rice. After eating there when I was in Chicago a couple of years ago, and trying this Cilantro Lime Rice for the first time, I knew I had to figure out how to replicate it to make it at home.
Chipolte Copycat Cilantro Lime Rice
For this recipe you will need:
1 Cup Rice
1 Lime to zest and juice
Salt (to taste)
1 Tablespoon Butter
The amount of cilantro, lime, salt and butter will vary depending on the amount of rice that you are preparing. For my family I typically prepare 1 Cup of rice in my Rice Cooker .
Prepare the rice using a Rice Cooker or however you usually prepare rice.
Once the rice is finished you will then mix in 1 Tablespoon of butter.
Zest the lime and mix the lime zest into the rice.
Squeeze in the juice of 1 Lime.
Sprinkle in the Cilantro. I usually use a handful of Cilantro that I have chopped. I guess it would be about a 1/4 of a cup.
Salt to taste.
This rice is great as a side dish or could be used to make homemade burritos. I recently served this rice with my Cilantro and Citrus Baked Shrimp and my family loved it!
