Yesterday I went grocery shopping and got a really good deal on chicken. It was chicken breast with the bone in which did mean extra time pulling the meat off the bone but for the price I couldn’t pass it up. I was specifically shopping for things to take for lunch this week and I thought this chicken would be great in a chicken salad. I also picked up some grapes to go in the salad.
Tonight while my chicken was boiling I sliced the grapes in half. I also got some beautiful apples as well so I thought I’d try a little apple in my salad. After chopping the grapes and apple I added a little lemon juice to keep the apples from turning brown.
Here’s the rest of the recipe:
3 chicken breast, shredded
1 bunch of grapes, sliced in half
1 apple, thinly sliced
1/2 cup fat free mayonnaise
1/2 cup fat free sour cream
2 teaspoon dill weed
1 teaspoon garlic powder
1/4 cup Grated Parmesan cheese
Mix together chicken, grapes, and apples.
Add the dressing mixture to the chicken and fruit.
Toss to coat.
Refrigerate until ready to eat
