This is a recipe I created a couple of years ago. I often get tired of the same food over and over so I start experimenting and creating new recipes. This one is very easy and your family will love it.
There are jot really any measurements for this recipe. I just adjust it depending on how many people I need to feed.
You will need:
Potatoes, peeled and diced or thinly sliced
Shredded cheddar cheese
After peeling and washing your potatoes you will need to either thinly slice them or dice them into small pieces. I prefer thinly slicing mine as it does not take as long to cook. Plus I have a mandolin slicer from Pampered Chef that I love!
I then place the potatoes in a large bowl. Drizzle them with olive oil and toss to coat.
Next arrange the potatoes in a baking dish. I have a deep dish stone baker from Pampered Chef that is perfect for these potatoes. If you are cooking for a large crowd you may need a larger dish. The potatoes do not have to be in a neat single layer. Just dump them in there and spread them around.
Then, using the Grippo’s seasoning, liberally season the potatoes. If you are not from the south you may not be familiar with Grippos They are barbecue chips with a little kick to them. You can find the seasoning like they use on the chips, often in the potato chip aisle or in the spice aisle. This spice mixture is so good on other foods as well like burgers and chicken’s
The next step is to drizzle Ranch dressing over the potatoes. I don’t usually over ever bit of them because as the ranch warms up it will spread.
Next sprinkle with shredded cheddar cheese.
Cover with foil and bake at 400° for 30-45 minutes. The cooking time may vary depending on the thickness of your potatoes.
I didn’t get a picture of the finished product because my family devoured it to quickly!
This recipe could easily be changed to add other ingredients. I have added chives, onions, and bacon which makes this dish like a loaded baked potato. Oh so yummy!!
