Today it hit me, my dad’s birthday is tomorrow. Yikes! I realized I needed a cake but really didn’t want to take a trip to the grocery. After perusing through my cabinets I managed to throw together a Caramel Apple Cake, using a cake mix as the base. It was very easy and so delicious.
1 Box Yellow Cake Mix
4 Eggs (the box mix called for 3 but I was adding extra solid ingredients so I increased the liquids)
1 1/2 cups of water (this was also increased from what the box mix called for)
1/2 Cup Applesauce (this is in place of the oil)
1 Large apple, diced
1 teaspoon cinnamon
1/4 cup packed brown sugar
1/4 cup butter, softened
1/2 package (4oz) cream cheese, softened
2 cups Powdered Sugar
Caramel Syrup (ice cream toppings)
1. Preheat oven to 350 degrees.
2. In a large mixing bowl mix together cake mix, water, applesauce, eggs, brown sugar, and cinnamon.
3. Fold in diced apple.
4. Grease 3 round 8 inch cake pans.
5. Pour cake mixture into each pan.
6. Bake for 25 minutes.
7. Remove pans from oven and allow to cool completely.
In a bowl, with an electric mixer cream together butter and cream cheese. Gradually add powdered sugar until well blended. If the icing is to thick you can add a little milk to thin it down.
Assemble the Cake
Allow the cakes to cool completely.
Place the first layer on a plate or cake stand.
Spread icing on top.
Place the next layer on top and more icing.
Place the final layer of cake on top.
Pour the remaining icing on top, allow to run over the sides of the cake.
Drizzle caramel syrup over the top.
Serve and enjoy!
