Black Bean Burger
Tonight was Meatless Monday here at our house. I made these Black Bean Burgers. They are very Weight Watcher friendly with only 2 points per patty. I had never made these before and I wasn’t really sure how my family would react to burgers without meat but they really liked them. To me they kind of remind me of a bean burrito.
Here’s What You Need:
1 can Black Beans
1/2 cup oatmeal
1 Tablespoon garlic. (I like to use the garlic that is already minced and in a jar.)
1 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
Cilantro (I didn’t really measure this, I just used a “handful”)
1/2 Medium Onion
Here’s What To Do:
In a food processor (or with a fork) you will mash the black beans. I then took the black beans out and put in a bowl. Then in the food processor you should puree the cilantro, onion, and oatmeal. Add to the beans and then add the garlic, cumin, salt, pepper and one egg. Mix together.
Then with a spoon I spooned the bean mixture onto a cookie sheet with a layer of wax paper underneath. Use the spoon to press the beans into patties. It is very messy if you try to do it with your hands.
Place in the refrigerator for at least 30 minutes.
When ready to cook, heat a small amount of EVOO in a skillet on medium high heat. Add the patties to the skillet and brown for about 5 minutes on each side, until brown.
Once they were done, I made this lime sauce to use in place of mayo or other burger toppings.
1/3 Cup Fat Free Sour Cream
1 Tablespoon Lime Juice
1 teaspoon Cayenne Pepper
1/2 teaspoon salt
Mix these ingredients together and use as a burger condiment.
