This Barbecue Chicken Flatbread Pizza is one of my favorite ways to use leftover chicken and it’s only 5 Weight Watchers Points per pizza. That means you can eat the whole thing! It’s a quick dish that I can throw together for my family in the evenings that we all love.
Sometimes I like to make these pizza’s on the grill, giving it that smokey flavor but if I don’t feel like firing up the grill I will bake these in the oven on my Pizza Stone.
Barbecue Chicken Flatbread Pizza
2 oz Boneless Skinless Chicken Breast, shredded or chopped
1 large fat free tortilla
1 Tablespoon Barbecue Sauce
Diced Onion (use as much as you like)
2 oz Shredded Fat Free Mozzarella Cheese
1. Preheat oven to 400 degrees.
3. Spread chicken and onion on top of sauce.
4. Sprinkle with mozzarella cheese.
5. Bake for 8 to 10 minutes or until cheese is melted and shell is crispy. You may choose to turn the broiler on for a few minutes to brown the cheese.
6. Slice and enjoy!
